How to Make Kimchi (김치 담그는 법)

Making kimchi at home is a rewarding process. Here's a basic outline:

  1. Cut napa cabbage (배추, baechu) into halves or quarters and soak in salt water.
  2. Prepare the seasoning paste using gochugaru (고춧가루), garlic (마늘), ginger (생강, saenggang), and fish sauce (액젓, aekjeot).
  3. Spread the paste evenly on each leaf of the cabbage.
  4. Pack the cabbage into a container and let it ferment at room temperature for 1-2 days before storing it in the refrigerator.
